Paul Midgley, Chef/Owner Cutting Edge Catering, Syracuse. Chef Paul believes that some of the best products around can be found in our own backyard. He prides himself on sourcing, preparing and serving his clientele local, sustainable, organic and seasonal foods. Named CNY-area Chef of the Year for 2008, Paul will be opening the Cuento Gastro Pub in Manlius in the fall of 2009, featuring a locally driven, seasonal menu. |

Mary Kiernan, CCC, PCII. Chef Mary is an instructor in the School of Hospitality Management in the
College of Human Ecology at Syracuse University, Syracuse. She is the Vice President of the Syracuse
Chapter of the American Culinary Federation and Co-Chair of the SkillsUSA Culinary Arts competition
for high school students held in Syracuse. Chef Mary is a Certified Chef de Cuisine, Professional Chef II
graduate from the Culinary Institute of America (Hyde Park, NY). |

Jake Brach, CCC, Regional Culinary Manager, Rich Products Corporation, Foodservice Division and CIA
graduate. Chef Brach joined Rich's Culinary team, where he conducts product demonstrations and training
sessions for brokers, distributors, and Rich's customers. Named Rich's Regional Culinary Manager of the
Year in 2004, Chef Brach also teaches basic culinary technology classes at the company's headquarters in
Buffalo and other locations in the Northeast. |

Anand "A.J." Jayapal, Executive Chef, Panza's on the Lake, Saratoga Springs. Chef A.J. has received numerous awards in competitions locally and nationally, and has medals/merits in international competitions. He has exceptional experience working with such events as the James Beard Foundation Awards and Annual Chef and Champagne, and has had the privilege of cooking with internationally known chefs. He has also worked as a food stylist for the regional award-winning cooking show, Carmine's Table. Chef A.J.'s recipe for a great kitchen is "spontaneous cookery dictated by instinct." |
